Eggs Florentine
Preheat oven to 375 degrees F. For each egg:
Butter a 5" diameter ramekin or other shallow baking dish. Sprinkle with 1 ounce shredded pepper Jack. Cover with a layer of steamed spinach. Make a shallow well in the center. Break one egg into the well.
Top with 1 tablespoon plain yogurt. Sprinkle with freshly grated parmesan cheese.
Bake 15 minutes or until egg is of desired doneness (white cooked; yolk soft.)
